TO COOK: Soak grains in cold water for 30 minutes before cooking. Drain and add 1 ½ cups of water for every cup of grain. Bring to the boil, then reduce heat to a simmer for 20 minutes, or until the liquid is absorbed and the rice is done. It will have a lightly chewy texture.
